- Tasting Notes: Aroma of black pepper, blueberry, blackberry, with slight bacon fat smokiness. The fruit quality in the flavors becomes ripe blackberry, with notes of smoky bacon and spicy vanilla oak. The intense fruit character carries into the finish with lingering oak and black pepper. Winemaker's Notes: This vintage produced fruit of great intensity, with some vintage specific flavors and aromas, notably the black pepper element. For me, it is reminiscent of Syrah from the Northern Rhone. I chose specific barrels of Estate Syrah for this bottling to emphasize that distinct quality. read more... The entire block of vineyard was picked at the perfect maturity, and fermented in our rotary fermenter. The rotary speeds fermentation, promoting ripe fruit characters and softer tannins. This wine was aged for 14 months in new French Oak. Bottled in March 2004. 700 cases made. (hide)
