B Cellars Blend 26 Cabernet Sauvignon 2010

Winemaker's Notes:

Carefully de-stemmed, the grapes are given a 5-day cold soaking prior to the onset of fermentation. Total maceration time, including fermentation, averages 25 days. Each vineyard lot is fermented and barrel aged separately and we watch to learn how each specific terroir might contribute to the character of the final blend. Once the individual lots strike the right balance of flavor and tannin, we engage in meticulous blending sessions. Here, we try different combinations of the individual lots. After the final blend is determined, the wines are gently “racked” together and aged an additional 12 months in new French oak for a total of 29 months in barrel.

Founded by Jim Borsack and Duffy Keys in 2003, B Cellars winery is the collaboration of two like-minded individuals that shared a vision and, through a happenstance meeting, brought to life their dream of creating a food-centric winery focused on blending varietals using a combination of Old and New World wine making perspectives. Soon after, they met their third key player, Kirk Venge. Named “one of the Top 20 New Winemakers in the World” by Food & Wine Magazine (October 2005), Kirk brings with him a 37-year winemaking legacy through his father, Nils Venge, and a keen understanding of the Napa appellation. A bond was established almost immediately between Jim, Duffy and Kirk. With Kirk’s passion for great wine, first-hand knowledge and commitment to excellence, it quickly became apparently that he was the ideal winemaker for B Cellars. B Cellars grew out of a love for food and wine but evolved into a passion and drive to craft fine wines that surpass the expected. Utilizing a multi-vineyard, multi-varietal winemaking strategy, acquiring and blending Napa Valley's finest grapes and employing a team of passionate, hard-working staff with impeccable credentials are just a few of the qualities that make B Cellars a unique and memorable winery. B Cellars produces matchless blends that are favored by chefs and restaurateurs for their distinct character, depth, and food-friendly "layers" of flavor. Read less

Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Tasting Notes:

Blend 26 combines Cabernet Sauvignon grapes from three notable Napa Valley vineyards. When carefully integrated, we believe the whole surpasses the sum of its parts. Hours upon hours of assemblage take place prior to determining the composition of this special wine. Our 2010 Blend 26 Cabernet Sauvignon immediately catches your attention with its beautiful, refined deep garnet color. Hints of light vanilla dust, plush fruit tones, aromas of cherries and black currants jump from the glass. This full-bodied wine exhibits luscious fruit and elegantly refined tannins, with sensations of hard cherry candy and deep, rich black fruit. Drink now or age for the next 8-10 years.
