Ayala Champagne Blend Champagne Perle d'Ayala 2002

Winemaker's Notes:

In December 2004, Société Jacques Bollinger acquired the house of Ayala and since then has invested heavily to further enhance the style and quality of their wines. Under the careful management of Hervé Augustin, Ayala continues to go from strength to strength. One of the original twenty six Grande Marque Champagne Houses, Ayala’s noble history dates back to 1860, when Edmond de Ayala received the magnificent Château as the dowry for his wedding. A further stroke of good fortune in that Edmond’s brother was based in London, allowed good quality distribution of the brand in Britain from its inception and by 1908 Ayala had received the Royal Warrant from King Edward VII. Today, the dynamic Ayala range is pioneering the low and zero dosage philosophy, with wines of elegance and great sophistication. A prestige cuvee has to be a masterpiece. The Cuvee Perle d'Ayala deserves its name as the House itself is a jewel in Champagne. This wine has been aged for over 5 years in our cellars. The real cork used for this long ageing allows the best control of oxydo-reduction and ensures the development of very delicate and complex aromas. It is a very rare practice today in Champagne and the bottle is known for its famous “bague carrée” (square ring). At this stage, the freshness of this exquisite wine goes well with delicate entrees such as carpaccio of duck foie gras, pastry of salmon and red mullet, raviolis of ris de veau and lobster.

The origin of the grapes, the selection of only the very best juice (the cuvee), a special gift for blending, long ageing in the cellars and a true passion for wine : these are the elements that guarantee the quality of the champagne made at Ayala. Indeed, Ayala Champagne is above all considered as a wine, a great wine which has to fully express its aromas and its bouquet, a wine for wine lovers who share the same passion. That is why the back labels give all the important information about the cuvees as well as the date of disgorgement, wich enables the aficionados to better manage their cellar. Champagne Ayala invites you to discover a very complex range of wines. Read less
