Extremely dry but still manages to be refreshing. It's getting to be the wrong season for this right now but I'd be happy to have this with strawberries in early June.

Produced in the Penedès region north of Barcelona, Spain, this Cava is a great sparkling alternative. It's a blend of the traditional grapes used for Cava: Parellada, Xarel-lo, and Macabeo. Made in méthode champenoise with no dosage - meaning it's bone dry.
