Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Extremely dry but still manages to be refreshing. It's getting to be the wrong season for this right now but I'd be happy to have this with strawberries in early June.

Produced in the Penedès region north of Barcelona, Spain, this Cava is a great sparkling alternative. It's a blend of the traditional grapes used for Cava: Parellada, Xarel-lo, and Macabeo. Made in méthode champenoise with no dosage - meaning it's bone dry.

Winemaker's Notes:

This dry, medium-bodied cava is extremely balanced and versatile, showing toasted baguette and biscuit aromas on the onset and lovely flavors of pear and citrus fruit in the mouth. Fine beading and a persistent finish make this organically grown sparkler an awesome value for the price.
