- The 2003 Verdejo is sparkling pale yellow in color with greenish hues. It has typical varietal aromas of fine herbs, pears and apple. The wine is full, elegant and persistent. Try with fish and shellfish, whether raw, boiled or in a sauce, fish and shellfish mousse, smoked fish or meat, soups, bisques and fresh cheeses. Composition: 98% Verdejo, 2% Sauvignon Blanc
