Food Pairings for Arrayán Selección Red
The Arrayán 2007 Petit Verdot spent 12 months in 100% new French oak. The grapes for this varietal are harvested by hand and de-stemmed and then go through stainless steel fermentation for approximately 20-30 days. During this time, there is frequent punching down of the skins. The result is a dense, rich wine with aromas of deep ripe fruit, roasted herbs, and chocolate. Allow this wine to age for 6-8 years. The climate in this area is somewhat extreme, from harsh winters to hot summers. However, the risk of frost is not high during the growing season. In the summer months, irrigation is required since there is very little rain. The result of this climate is somewhat sparse crops of healthy grapes that are tended to very carefully, with no harsh chemicals and only natural fertilizers when needed. This wine is grown in the Castilla La Mancha section, of Méntrida in Spain. Méntrida is a DO (Denominación de Origen) south-west of Madrid. Although, the wine industry in this region is still quite small, it was granted DO status in 1976 and is producing limited quantities of outstanding, notable wines.

The toasted cocoa and coffee scents are prominent, along with creamy vanilla, and the underlying ripe fruit of currants. It is full bodied with dry tannins and the sweetness of matured alcohol. It has a nice, long finish—well remembered!
