Aridus Chardonnay 2012
This unapologetically creative Chardonnay was crafted with a unique blend of different yeasts, including native yeasts to build a rich complexity that will be difficult to duplicate again. Carefully fermented in steel, followed by a secondary malolactic fermentation to settle tannins into a soft, buttery character, this bold, oaked Chardonnay was aged in a collection of both new and neutral French oak barrels for 12 months.
