- David says it tastes like strawberries and cheese. I am prone to agree with at least the former. It's a gentle wine, with a softness, but not a sad lack of acids; those are there, too, they just don't prick and poke. A kind, sweet thing that is happy on its own; doesn't require food.

- Millions of tiny bubbles carry aromas of pear tart, honeysuckle, and vanilla bean. The flavor is zingy, with a blend of citrus, pear, vanilla spice, and yeast. The creamy texture is supported by quarried rock mineral structure. The finish is complex and very, very fresh.
