- Dominique Guyon told me that they started the harvest on August 26th with the Côte de Beaune followed by the Côte de Nuits and finally the Hautes Côte. As it turns out, we unfortunately did a green harvest and our yields were a pitiful 15 to 18 hl/ha in Corton and only 25 hl/ha for the rest. Sugars were quite good at between 13 and 14.5% and as such, we did not chaptalize. We did acidulate but much less than we imagined at the time of the harvest. The trick was to chill the fruit immediately and let the extraction occur naturally. We shorted our cuvaison to 17 days rather than our usual 21. We also destemmed read more...100% as the wines didn't need another source of tannin. We have bottled our wines when we think they were ready and thus we have been selectively bottling since September and will continue through March. I tasted these in February. (Diageo Château and Estate, New York, NY; Friarwood Ltd, UK). This is even riper and here the entire wine is a bit like dry port and while the nose and flavors are exceptionally powerful, the finish is definitely warm and the overall impression is presently rather awkward.
