Percentage Grape: 40% Sauvignon Blanc, 30% Chardonnay, 30% Chenin Blanc.<br/><br/>Soil: Eroded granite.<br/><br/>Growing Climate: 7 to 10 year old vines on a 4-wire Perold trellising system, with drip irrigation.<br/><br/>Type of Harvest: Hand harvested at optimum ripeness. Harvested at 24 to 25.5 degree Balling. Yield 6 tons per hectare.<br/><br/>Vinification Method: Style: A full-bodied white blend of noble varieties. Complexity of tropical fruits and citrus flavours with undertones of minerality and a full, round mouthfeel. Vinification: Minimal intervention in the natural process of vinification, allowing the cultivar to express its individual characteristics and the soil of its origin.
