- As a firm believer in "letting the wine make itself", Jo Pithon chooses a non-interventionalist approach in the cellar. The easiest way to do this is to cultivate healthy Chenin Blanc grapes. This is fermented in large, oak foudre casks and therefore get's a real earthy character. Dry, honeyed, fresh and very mineraled on the finish.
