Dark Ruby Red, Aromas of Cedar, Blackberry, Allspice, Pepper and Leather. Full bodied, big middle, with chocolate, bing cherry, some spice. Good balance between fruit, oak and acid. Medium finish. Once the grapes are picked, which can take anywhere from three days to three weeks depending on the weather, they are crushed and the juice placed in large stainless steel tanks for fermentation. Fermentation is allowed to proceed until just the right amount of sugar has been converted to alcohol, at which point the young wine is separate from the remaining pomace of skins and sediment and racked into French oak barrels to age in the caves. Periodically, the barrels are racked over the course of two years to remove standing sediment prior to bottling, corking, labeling and packaging. Wine cases are then stored in a specially designed, temperature controlled warehouse. Read less

Nice color and muted fruit on the nose along with hints of damp straw. Upon tasting, I notice refined tannins which hold together the dark fruits, vanilla, light touches of oak and a definite earthiness. The wine in my opinion is perfectly structured and has a finish that goes on forever. Year after year the "ELOGE" becomes more refined than the previous year.
