Anderson's Conn Valley Vineyards Cabernet Sauvignon Napa Valley Estate Reserve 2000

Winemaker's Notes:

The 2000 Estate Reserve Cabernet Sauvignon is a deep ruby/purple color that has a sweet bouquet of damp earth, black currants, tobacco leaf and saddle leather. It is medium bodied with supple tannins and a surprisingly long finish. This wine is tasting great now and will go well with those weekend BBQ's and special dinners.

Once the grapes are picked, which can take anywhere from three days to three weeks depending on the weather, they are crushed and the juice placed in large stainless steel tanks for fermentation. Fermentation is allowed to proceed until just the right amount of sugar has been converted to alcohol, at which point the young wine is separate from the remaining pomace of skins and sediment and r... Once the grapes are picked, which can take anywhere from three days to three weeks depending on the weather, they are crushed and the juice placed in large stainless steel tanks for fermentation. Fermentation is allowed to proceed until just the right amount of sugar has been converted to alcohol, at which point the young wine is separate from the remaining pomace of skins and sediment and racked into French oak barrels to age in the caves. Periodically, the barrels are racked over the course of two years to remove standing sediment prior to bottling, corking, labeling and packaging.
