Anderson's Conn Valley Vineyards Cabernet Sauvignon Napa Valley Estate Reserve 1996

Winemaker's Notes:

COLOR: Medium Ruby with an attractive edge AROMA: Currants, rose petals, and clove spice, a touch of new leather and dried cherries TASTE: Follows the aroma profile with fine, firm tannins. It promises to develop subtle, supple layers. Perhaps the most Bordeaux-like wine we have made. THE YEAR : A warm winter and early budbreak marked the year 1996 with late rains extending into May. The rain during flowering caused shatter of the flowers, which in turn cut the eventual crop by 50%. The summer was relatively warm with several heat spells, which speeded veraision and ripening. A cool trend in September allowed grape flavors to catch up with the sugars bringing the fruit into excellent balance. THE WINE: This wine is 100 Cabernet Sauvignon from grapes grown in our Estate Vineyards in Conn Valley. It is a blend of numerous different clones, each of which adds to the overall complexity of the wine. The 1996 Estate Reserve Cabernet Sauvignon was aged in 225 liter French Oak Barrels for 21 months in our caves on the property before bottling. The wine was aged in bottle for one year before release.

Once the grapes are picked, which can take anywhere from three days to three weeks depending on the weather, they are crushed and the juice placed in large stainless steel tanks for fermentation. Fermentation is allowed to proceed until just the right amount of sugar has been converted to alcohol, at which point the young wine is separate from the remaining pomace of skins and sediment and r... Fermentation is allowed to proceed until just the right amount of sugar has been converted to alcohol, at which point the young wine is separate from the remaining pomace of skins and sediment and racked into French oak barrels to age in the caves. Periodically, the barrels are racked over the course of two years to remove standing sediment prior to bottling, corking, labeling and packaging. The enormous 1996 Cabernet Sauvignon is a super-powerful, fabulously-concentrated, 50-year wine. Aromas and flavors of blackberry/cassis jam, minerals, and subtle oak are found in this extravagantly rich, gargantuan Cabernet Sauvignon that should age
