Our 2006 Cabernet perfectly balances on the line between strength and elegance. The wine presents a classic Cabernet profile with a Dry Creek Valley twist. It is garnet black in color, with enveloping aromas of ripe blackcurrant and bramble (or is that a touch of northern California chaparral?) and cedar. It is medium-weight, with flavors of tart cherry, black raspberry, clove and red currants-all held in a velvety cup. The finish is long and strong, and while it is delicious now, this Cabernet has all the pieces in place to age beautifully for another 5-10 years. The ulitmate food-pairing for this one might be a pan-seared venison backstrap with a morel and cranberry sauce, but less exotic pairings favor red meats, fresh herbs, black pepper and dark mushrooms.
