This is our first attempt at making a sulfite free white wine and we learned many lessons. The most important is "Give the wine some time to get over bottle shock." When you bottle a white wine with sulfites, the sulfites bind up with the oxygen that comes in and preserves the aromatic compounds that make them smell nice. Without sulfites and without red pigment, which can also buffer the oxygen, the wine temporarily looses its characteristic aromas and develops a slight dry sherry nose.
