Altadonna Pinot Nero 2008
In early September, the grapes were manually harvested. Vinification took place in stainless steel tanks over 18 days at 22°C with periodic aerations occurring. The grapes were then left in contact with the skins for an additional 10 days. To preserve the fruit’s natural flavors, the wine was aged for 1 year in stainless steel tanks. Full malolactic fermentation occurred. Prior to bottling, the wine was filtered and fined then cellared for an additional month.
Food Pairings for Altadonna Pinot Nero
A bouquet of raspberries, strawberries, and plums fills the nose. The acidity of the fruit is balanced by mineral and balsamic notes and hints of caramel and herbs. It is supple and elegant with a smooth, silky finish.
