Winemaker's Notes:
Vine: Dolcetto 100 % Vineyard: Surì vineyards are situated on the hills of Pironivillage in Dogliani. They are grown through low Guyot method andnatural treatments in full obedience of environment. They are exposedin the south-east. The average yearly return is about 7.000 kilos perhectare. Grapes come from organic farming A.I.A.B. certified. Vinification: It is traditional. It takes place through aselection of the grape-stalks and a careful pumping must over grapedregs. The maceration goes on for 6-8 days, it depends on the year. Maturation and ageing: at the end of the fermentation, thewine ages in vitrifying cement tanks till the bottling, which normallytakes place in late August. It is aged in bottles for about 2 monthsbefore being put up for sale. Main features: Dolcetto di Dogliani Surì, thanks to itsgood sun exposition, has an intensive ruby colour with purple reflexes.It has an elegant, complex and fruity smell of jam and liquorice. Itoffers the palate an harmonious, persistent, warm and lightly tannicsensation. Gastronomic combinations: It is intensive and equilibrate,for this reason it goes well with pasta, savoury appetizers, roast andstewed red meat and medium ripened cheese. Alcoholic strength: 13 % vol. Preservation and how to serve it: it improves its ageing during the first 3-4 years after harvest. It can be served at a temperature between 16° and 18°C.
