Cold maceration is one of the pillars in the distinction of Granbazán wines. Collection is made by hand and in boxes, marking the beginning of the fermentation process of these elegant fruity wines. Maceration takes place between 5-7°C. The fermentation tanks are situated above the recipients of the must, meaning that the extracted must is done so only by means of gravity. Alcoholic fermentation takes place at low temperatures in stainless steel tanks over 1.5 months.
