Very nice cab from Paso. A bit tight on opening. Black and dark blue fruits started to emerge with some medium grain tannins and a medium finish. Just a tad on the hot side at first as well but mellowing a bit with some air time.

Adelaida's wines begin at the roots, pushing through the rocky limestone soils on the west side of Paso Robles on California's Central Coast. The winery, which originated in 1981, is located 14 miles east of the Pacific Ocean at an elevation of 1,800 feet in the Santa Lucia mountain chain. The winery is a vineyard driven operation that considers itself a foremost proponent of the potential of west side Paso Robles. Adelaida's wild and rugged mountainside vineyards are loaded with limestone and calcareous shale. According to winemaker Jeremy Weintraub, "these characteristics cause the vines to strengthen. This results in added stress on the vines, which lowers the yields but produces more intensely flavored fruit". In keeping with the winery's sustainable philosophy, the vineyards are not tilled, encouraging native grasses, wild sage and rosemary to flourish between the rows. Adelaida produces from its own Estate vineyards and a select group of contracted vineyards on the west side of Paso Robles. Amongst its holdings are the two principal estate properties, Viking Vineyard and HMR Vineyard. The mighty Viking Vineyard was planted in 1992 and is now producing great Cabernet Sauvignon and Syrah. The historic HMR Vineyard was pioneered by Dr. Stanley Hoffman in the early 60s. Devoted care and substantial investment have returned these 40+ year old vineyards to their former glory. Excellent Paso Cab, very well balanced and smooth, not overly jammy or oaky.

Great cab from Paso Robles. Very well balanced with plenty of dark fruit, dried plums, black raspberries, nice oak and fine tannins. Would put this up against many a Napa cab.

Excellent Paso Cab. Black cherry, silky tannins, dark fruit and a really nice finish. Not overly complex but a really nice expression of the central coast.

Adelaida Cabernet Sauvignon Estate Reserve, an Excellent Paso Cab. Just the right amount of dark berry, tobacco, medium tannin and alcohol. The combination was very well balanced and extremely enjoyable.

Elegant, balanced, subtle and refined! These are not words for this wine. It is a huge and expressive wine with mouth coating flavor. The aromatics are pushed aside by a tart and rich clean profile that can only be described as Sweet Tart candy with a kicker!
