At Acacia Vineyard our aim is to create a rich, concentrated and focused Chardonnay from our remarkable Carneros fruit. We hand harvested the fruit for our 2005 Carneros Chardonnay, then allowed three hours of skin contact to extract flavors from the skin. A brief period of aeration enabled us to extract those delicious flavors and precipitate out any tannins associated with skin contact. The fruit for the 2005 A by Acacia Chardonnay was harvested at night and in the early morning to guard the aroma and flavors of the grapes. The grapes were received at the winery and primarily whole-cluster pressed. A combination of oak barrel toasting levels was used to provide complexity. This wine offers aromas of apple, mango, fig and guava. The medium to full-bodied palate maintains impressive balance and flavor concentration, so it will hold its own with rich foods.
