15% native fermentation for the reds A surprisingly meat tone open the nose here followed by very fresh and pure aromas of coffee, black plummy and curranty fruit, and subtle framing notes of balsam and viy. Plush on entry then clear on the palate with rather big, black currant fruit. There's enough substance and tannin here to make this a little chewy, and a bit short today but the flavors are very pure and clear gaining lovely acid driven notes of wild raspberry on the finish complimented by rich, smoky tones of roasting coffee. This is really very elegant and yet powerful. 93pts

We opened the first in August much earlier than expected after finding some very slight leakage from the capsule - fill level still very good - and no apparent harm to the wine yet (it was a spring 08 release). While it's hard to say how well/long this will age, if you like rich and concentrated reds that manage to balance acidity/tannin, it should be difficult to resist opening this on the near term. JUst make sure you've got a good char on a nice chunk of red meat - a thick med-rare ribeye with champignons was perfect... You'll have to hurry if you hope to find some still - can't wait to try the rest of their reds...

The 2005 Merlot is dark ruby-colored with a nose of pain grille, cassis, and red currants. This is followed by a medium-bodied wine with flavors of spicy black cherry and other red fruits. It has good balance but is slightly compact in the finish.
