Grapes are allowed to ripen to physiological ripeness to ensure peak flavors and structure. After harvest the grapes are 100% de-stemmed and crushed. Once fermentation commences the wine is gently pressed and placed into a variety of new and old French oak barrels including Rémond and Seguin Moreau barrels from various forests. Suggested Recipe Pairing presented by
Coconut Rice Sweet Potato Cheesecake

RiceSelect's creamy Arborio gets blended with sweet potato, coconut milk and vanilla to create this decadent cheesecake. Pairs well with Saunternes; a white dessert wine that has hints of coconut from aging in oak barrels.

Bright and bold. The wine has the refinement of Oregon but the depth and richness of California. Still young but already showing lovely red cherry, raspberry, and forest floor. Acidity is high making this a perfect wine for your next big dinner.
