The concept of the 8th Estate Winery is simple: source the best ingredients and make the best wine. They have done this by creating something no one else has in Asia - a fully functional urban winery. The concept is inspired by the known principal that wine does not travel well, so by importing international wine making talent along with exceptional grapes, this formula will produce spectacular wine. By bringing people to the wine rather than wine to the people, 8th Estate are offering the opportunity to taste wine at its optimum, because Hong Kong demands and deserves the best. The master vintner, Eddie McDougall, travels the world to source and personally select the best grapes from each region and, once chosen, the grapes are harvested and frozen to preserve each grape at its highest potential. Flash freezing has been proven to preserve grapes at their peak of winemaking potential and create spectacular vintages. In a frozen state, the grapes are shipped to Hong Kong where they are allowed to thaw and then production begins as it would in any boutique winery in the world. The wine is left to age in French and American oak barrels for up to 24 months depending on the variety. The 8th Estate is a specialized operation and, as such, each barrel is carefully monitored and specifically blended by the master vintner. The limited production volumes ensure that the wines receive individual attention and elite status. The Heritage is a classic red wine Bordeaux blend of Merlot, Cabernet Sauvignon, Cabernet Franc. It is un-filtered to retain its full flavours and is partially aged in new American oak barrels. Aromas of blackberries and mature cherries with hints of vanilla and chocolate come to the nose and its brilliant dark ruby colour reveals the wine’s complexity. The Heritage is well balanced as it marries soft tannins with spicy fruitiness. It has a long finish with lingering fruit sensation that fills your mouth. It is perfect with pasta, pork, beef, and French cheeses of medium age.
