Still dependable despite changes in ownership, this winery again delivers an elegant, well-made wine. With this vintage, it veers more toward herbaceous notes than fruity ones. The dominant flavors are of green olives and sweet bell pepper. Don't think, however, that it's lean. Oak provides fatness, and the right foods, like grilled red meat, will coax out the berry sweetness.

Packs a mouthful of tarry black cherry flavor onto firm structure, folding its fine-grained tannins into the finish with enough elegance to warrant cellaring. Best from 2000 through 2005.

From the makers of Louis Martini and Ghost Pines, the William Hill makes a fine addition to your collection - affordable luxury! Robust and complex, with heady notes of tobacco, leather and cedar overlaid with cassis, plum and star anise. Great buy for a yummy cab that is delicious now, worthy of cellaring, and works as well on its own as it does with steaks, pork loin, veal or grilled vegetables.

William Hill is a well known Napa Valley producer that makes great quality wines at reasonable prices. The Cabernet has a soft tannin structure and an added richness with a polished texture. Dense blueberry and blackberry fruits are abundant on the palate, with a touch of cedar and licorice on the finish. Drink this with a wild mushroom risotto or any dish featuring portobello mushrooms.
