History of the grape: Parellada is considered to be the most refined grape of Cava, in which it adds freshness to the blend with its bright acidity. Some increasingly ambitious still examples are also made.

Characteristics of the grape: Low in alcohol, high in acidity, bright and citrusy, creamy; likes low yields and poor soil.

Regions where the grape currently is important: Penedes

Type or types of wines the grape produces: This grape variety is known for the brightness and finesse it adds to the Cava blend. Some, most notably the Torres winery in the Penedes, also use it to make very good still wines.
