Willie's Wine Bar (Right Bank, on Petit Champs), owned by a Brit, amazing wine selection and food is consistently excellent.
If you want a proper meal, try Cameleon which just opened in St.Germain, they carve the meat as it is ordered. Yum.
Finally, no wine pilgrimage to Paris is complete without a trip to the Virgin Megastore of wine, Lavinia at 3 Boulevard de la Madeleine.

Try the Bistrot du Sommelier in Boulevard Haussman, excellent bistro food - paired with wines picked by the staff, - and they will only tell you what was in the glass - afterwards...

Les Caves Taillevent, 199, rue du Faubourg Sainte-Honore is a wine store & restaurant. It is worth a visit.
I also agree with Eivind about Bistrot du Sommelier. It is a nice challenge to try to figure out what you are tasting.
