Wine aroma

Is there a service that allows making wine by yourself (in the long term perspective, of course)?

I mean, the service that allows you to choose type of grapes, aroma and other characteristics? Or is it too complicated and expensive?

If you could choose aroma of wine, which one would you chose?

Seems a little expansive to assume that you can choose everything unless your smart and have experience in picking grapes off the vine, popping them and judging for yourself. Then all you have to do is pay for them, sort, ferment, age (In whatever type you prefer. New, used, stainless, etc.), bottle and all that stuff and pay for all that.

While it's exciting - it's time consuming and if you live a normal life not in the wine industry - not very practical.

Now - if I know Snooth, someone is going to shoot that down quickly.

I like fruit - probably dark berry fruit beat fruit. Not my sole favorite aroma however.

I have friends who have tried to form wine clubs to  make their own and whilst they have a lot of fun and camaraderie they rarely produce anything reasonably interesting

I tend to like the berry characteristics on my reds raspberry/blackberry/black current etc

You don't necessarily choose aromas. It's not like it's a secret ingredient. Granted certain grape varieties when fermented exude certain aromas but a lot of it has to do with ripeness, oak, extraction, maceration etc. In making your own wine you should first be focused on it being drinkable when completed. That's step 1. If picking out final characteristics were so easy everyone would be doing it themselves.

Wine isn't about engineering something out of various ingredients.

It's the result of fermented grapes and terroir has much to do with it.  It's what the location and ground give the grapes.  Weather and tending also have impacts. 

There shouldn't be manipulation by chemists to make it something other than what the good earth gives you.

This is why all of us here love wine.  It's not always as good from year to year, but there's always good wine.
