I think you'd almost have to leave this task to a tall glass or two of lager, but if you must have wine with your final meal, how about going down with class by downing a nice bottle of demi-sec Vouvray.

For a Red... I would say something like Turning Leaf Cab... Simple with a touch of class, but not too expensive. After all one should have some red wine to counter the impending heart attack.
For a White... Go Low Rent. Almadan Mountain Rhine. A Sweet Cheap Wine to cut the Peppers and Chili... Again Go Low Rent.
