- What do I pair with this menu?
Hello!
I buy wine for a restaurant in Seattle and I really need some help with an upcoming menu! I have never had some of the ingredients, so I have no idea what wines will go well with them. Here is the menu:
Starter
Roasted Marrow Bones on the Half Shell with Sweet & Sour Marmalade, Toast, and Parsley Salad
Vegetarian: Grilled Romaine Salad and Blue Cheese Vinaigrette, Garlic Croutons
Entrée
Wild Boar Sloppy Joe with Onions, Fried Sage & Pickled Jalapenos, served with Beef Fat Fries
Vegetarian
Spring Vegetable Ragout & Parmesan Polenta
Dessert
Whoopie Pie - Chocolate Cake with Vanilla Creme Filling
By the way, we try to focus on local wines (Washington and Oregon) and we always have 6 reds and 6 whites.
Any suggestions?

May just be the recent GTI, but I'd throw a Zin into the list. A Columbia Valley Syrah would also be good...

The proper Chenin Blanc from your neck of the woods could also work with the vegetarian options. And I suppose a Sangiovese also tends to work quite well with boar, assuming the jalapenos are kept under control ;-) .
Maybe a cab, and another white (chardonnay or riesling), too, to round out the list, and give people options they recognize from your area?
Anyone out there with up-to-date knowledge on the best versions from appropriate wineries right now in Oregon/Washington? My awareness is a few years old...
