First, when I submit a wine, you do none of the immediate cheap-and-dirty things to correct my spelling and capitalization, which means that things may look lousy on your site because I'm a bad typist/don't capitalize/can't spell. Cf, http://www.snooth.com/wine/vin-de-p... I assume you still go through later and correct these things? (Manually? Oh my... must be a better way...) But you could at least deal with the capitalization, for which there are clear rules in all relevant languages. Mark, didn't I send you my MP3 filename and tag corrections script? That deals with cap rules for most phrases in English, French, German, and Italian, and it's just one massive regexp sequence. Use that. Depending on how expensive it is, just use it when taking the submission, but if that's too much of a hit, a daily pass with that will do plenty to clean up the data.
Second, when you get around to the whole autocompletion stuff, let's have some autocorrection (or red underlining like... say in this field I'm typing in Right Now, so it's not like you couldn't just steal phpBB's code for it; they've probably got all the relevant foreign languages covered too) in the submission fields too, not just for search. I used to hate the red underlining thing when it first appeared, but I've been beaten down to the point where I actually find it kind of handy. But, more to the point, the whole world is used to it.
