Spicy southern apps what to pair and share

I am grilling venison sausage and alligator boudin, making southern egg rolls with chicken, tasso and collard greens. Taking to a get together and would like to know what wines to pair and share.

WOW!
I have to say that I enjoyed both KANGAROO and ALLIGATOR,
though I never had the Alligator in the form of BOUDIN.
I love BOUDIN also.
I love SCOTTISH HAGGIS also. The Haggis was served to me at the BRIDGE
OF ALLAN restaurant in Sterling, Scotland with Scotch Whisky, but I do not drink Scotch!
Venison....I always marinate in RED WINE before cooking.

Which wines.....well, usually a lovely Bordeaux from France.
But I have had Venison with CONCHA Y TORO (RED) from CHILE!
Depending on your price point...you would have a range of CONCHA Y TORO
from Chile for use with Venison.

How long was the venison hung?
In England our game-keeper always reminded us that in France it
is not hung for as long as in England and so the taste is extremely strong in France.

I sometimes cubed my venison and marinated for 2 days and placed
it on the BBQ grill....considering how cool some British summers are
I actually chose to eat venison in the summer from time to time.

Be careful with the collard greens as you know the taste is sometimes slightly bitter
and so you may want to tame it with cream....just an idea!

What an interesting combination!

thanks for the suggestions. the egg rolls with collard greens are my specialty and havebeen lucky enough to find a recipe that avoids the bitterness, the tasso and chicken balance it out well. The egg rolls have a liitle heat to them so I too was thinking that a Chilean wine would pair well. The Venison is mixed with a little pork fat to make a very good sausage that is not too gamey. The Boudin and venison on the grill make for a smokey treat. I usually drink a dark beer but wanted to try a wine. I save the scotch for the cigar afterwards!

Those eggrolls scream for a moderately sweet Riesling, or possibly a Gewurz.

Some people are using ZINFANDEL with Venison
also SYRAH, RHONE BLENDS, and PINOT NOIR.

I would not use Zin.

I have used a good BURGUNDY though.

They were Awesome! My be st batch ever! The Alligator Boudin was good also. Tried several different wines and they all seemed to work. Concho y Toro - Carmere and Cabernet, a malbec, a reisling and even a bollinger champagne! I only wish that I had more eggrolls as it was so much fun. We turned the evening into an open that bottle night. Fun was had by all. Thanks fo rall of the great suggestions!

I use the recipe from "Magnolias restaurant " in Charleston South Carolina. Everytime I make them they get better. This was the first time I used a Tasso ham from New Orleans and I think it was the key.

Paula Deen is a straightforward southern comfort food cook and her food is great but I prefer southern comfort food with a twist. Magnolias, Blossoms and Carolinas in charleston are the best at it. With Cypress coming n at a close fourth - Cypress does have the best wines around and a very different wine cellar - with wine angels.

just a simple VIN DE PAYS D'OC...so good ...HERZOG SELECTION

Alonzo, try Total WIne on Camelback.  According to Wine-Searcher, they carry it.
