Duck is a great match for Pinot Noir.
A lighter cut of steak is also a good choice. Filet or eyeround, with a not to aggressive cooking method. Say pan seared is also a good choice.
What style of cooking do you prefer?

Other types of poultry, including roast chicken and turkey, can work well. With a lighter pinot noir, I've even had success with some salmon preparations. Several cheese dishes can also be a good match, though it depends on the cheese variety and how it's prepared.
Thus we come back around to Greg's question about the styles of cooking you like...

Although I don't consume veal, I have heard many times that a pan sauteed version also works well with Pinot Noirs. I would make a Pinot Noir Demiglaze personally.
