doing a quick search, and trimming it down to wineries I personally enjoy,
Justin Vineyard Obtuse
Edna Valley Cabernet
Clayhouse
Firestone Vineyard
Those are just wineries I can vouch for

Kylewolf, Edna Valley was San Luis Obispo, and Firestone Santa Ynez Valley (Santa Barbara), last I checked. Do they also have Paso Robles bottlings?
Wistiles, here're some recent threads on the subject:

A lot of the posts in those threads are about travel there, but you'll also be able to pick up the names of several wineries while wading through the travelogue...

You might also try other varietals besides cabs. To get to know Paso Robles 'terroir' you'll definitely need to taste Four Vines and Turley bottles just to touch the bases.
Here're a couple more even older threads:

And another one from Santa Barbara that mentions a good Paso Robles zin:

Are you interested in any other varietals like zinfandel, pinot noir, syrah, petite syrah, southern Rhone-type blends, etc.? Whites?

dmcker, they are just bottlings from Paso Robles, I searched Snooth to make sure they did indeed have Paso Robles wines.

dmcker,
I'm mostly into reds, would be interested in syrah and petite syrah. I'll be on the lookout for your suggestions. Thanks.

Eberle
Martin & Weyrich
Justin
Vina Robles
I'm sure there are more but those are the one's that quickly spring to mind as quality producers in Paso.

Adelaida (cab, syrah, zin)
Edward Sellers (mostly Rhone belnds)

Anglim is located downtown on the RR tracks and has a lineup worth tasting. Also, Cass concentrates on Rhones and has a small kitchen - you can sit on the patio and they'll bring the tastes to you to pair with small bites.

So how many wineries in Paso Robles provide food, inn service, whatever, as well? Almost no place else does that in California, due to licensing intricacies and lack of prioritization. I've always thought it nice in France and other places in Europe to have food from a wine house with their wine. Only Ferrari-Carano and the former Souverain (now Coppola) in Sonoma do it up north, as far as I know. Civilized, cultured, call it what you may, it gives a more pleasant impression to me than the seemingly sole-focus-on-commerce nuances that often waft from California winery tasting rooms.
If anyone responds to this I'll start a separate thread to limit the thread drift here...
