opus 89

Posted by bobjag, Dec 23, 2008.

I have a bottle of opus 89 that i would like to share with christmas dinner.

How long should i allow it to breathe in the decanter?

what is the ideal serving temperature

I think 60 to 90 minutes should do the trick if your decanter provides for a large surface area - longer if you have a tall and narrow decanter.

As for temperature, I'd say 65 degrees, but remember that it is easier to warm the wine than to cool it. You can't bust out ice cubes at the table...
