My Cuisinart ice cream maker has not seen much play this summer, and Snooth's wine desserts article makes me want to try out some frozen wine desserts of my own.
Has anyone had any good experiences in making wine sorbet or ice cream? What recipes and what wines work well? Any tips? I imagine that this is difficult to execute well, with the varying sugar and alcohol in wines.
I'm especially concerned about texture and frozenness -- I've made bourbon ice cream in the past, and it took some experimentation to figure out how to retain a bold flavor of the bourbon without ending up with an ice cream that turns into soup in seconds.
