The great Sake should made from rice polished to 50% or lower and called daiginjō-shu (大吟醸酒). Comfortable texture to your palate with sweetness, sourness, bitterness all in balance. I even don't feel there is alcohol in it when compare with other grades of Sake.

Drink some of that 大吟醸 out of cedar (檜) boxlike serving containers at room temperature for a couple of hours. It will go down like water. Get up and try to walk around, though, and you'll find that there *definitely* was alcohol in it... ;-)

So cigarman, what brands of Sake do you get in Hong Kong?

There got lots of them in HK. ie 男山, 褔壽, 真澄, 臥龍梅...

Otokayama and Fukuju, the first two, are particularly widely distributed throughout Japan. Would be interested to hear of any others you have drunk, and your impressions of them. Sake is so very different from Shaosing...
