A great place is Casale sul Mare in Castiglioncello. Superb views of the Mediterranean, modern apartments and a great restaurant with a talented chef, Monica who takes a break in November to travel across the U.S. with her husband, who's the restaurant manager and sommelier. The property makes an outstanding wine: Fortulla IGT Rosso Toscana (Cabernet Sauvignon and Cabernet Franc). Great sights around.
Cheers,
Leo B.

Assuming you'll spend some time in Firenze, you should have a meal at TreDice Gobbi (13 Gobbi street). Excellent food and wine and the locals love it, though it's not always high in the tourist guides (is that a bad thing?).

Ann check out http://www.borgocasaalvento.com in Gaiole in Chianti. Great location and they offer everything you are looking for. I am friends with the owner and will be heading down there for a visit (and lunch with their new chef!) Thursday, taking some new photos and video of some recent renovations. If you have any questions about the property please pass them along and I will be more than happy to put them to Francesco personally.

We were just in Tuscany this Spring. In Florance we found a great restaurant across the river from the Uffizi gallery called Il Cinghiale Bianco (the white boar) http://www.cinghialebianco.it/ The food was great and so was the wine. Another Place was the Cinque Terre Very beautiful scenery and great restaurants. We made Riomaggiore our base and visited all five towns from there. This is were we made the discovery of the trip we tasted Siacchetra wine for the very first time. Sciacchetra is a white dessert wine. If you go there you should try it. Hope this helps

Have been to the Cinghiale Bianco a couple of times, and both were more than pleasant. I remember their pappardelle al cinghiale, with an Antinori super-Tuscan red, fondly. It can be a bit touristy, but somehow manages to transcend that.

I have been to Italy 8 times, 7 in the last 10 years. I like to post on http://www.slowtrav.com
which has a very active italy board. Several members live in Italy so you can get a local perspective. Are you looking to stay in only one place?
