I'm making this app recipe for a dinner party and would like to know what would be the best wine? A port?

No, a Sauternes or Barsac. Much better match. Second choice a weighty champagne (even something off-dry, though I'd go with a brut for general drinkability; places like Petrossian in NYC have made loads off the combination of champagne and foie gras...). IMHO you don't (or I don't, anyway) want a port before the end of the meal. Where in the meal does this course appear?

Unless budget is absolutely not an issue, d'Yquem is probably off the menu. Good alternatives are Suduiraut, Climens, Rieussec, Lafaurie-Peyraguey, and at the cheaper end even Filhot. How many people at table? That will determine whether you want a 750 or 375ml bottle, though I always buy a 750 since, even if not finished with the course, it can be drunk in the next day or two as a dessert wine.

To further clarify, if your foie gras dish is a standalone, or the main, then a port would work, as you then segue into desserts or after-dinner drinking. Thus my question about where in the meal the course appears.

I tend to drink vintage ports more than any other, and they should come at the end, or alone, IMHO. White ports early on are fine, but not with the foie gras. They even work with tapas. Got me thinking of Portugal, now. Not a bad thing on an overcast, rainy spring day...

Sounds like a full bottle of either sauternes, or champagne, to me. Also sounds scrumptious!

D - Sauterne with Foie Gras - never thought of it?!  Not sure why but might have to try it

on d'Yquem got to try 2001 - and before the usual howling about infanticide!!! It was amazing, we had it with a Creme Caramel for my birthday and.... well.....it is really amazing and will out last my time on planet earth by at least a generation!.

 foie gras and d'Yquem.....I am so intrigued I might have to find some punters to have a little look at that one
