You should see some of the old Champagne I've seen this week ... with the quantities these places produce it is a wonder that they can keep prices so high. I know there is a lot of demand but you should see some of these wine caves!

So do all the champagne houses use automatic riddling racks or do some still do it by hand?

Most are using a combination from what I can see ... it seems for the prestige and vintage bottles hand riddling is still being used but for the mass production non-vintage many houses are switching to the gyropallets. The gyropallets can do the complete job of riddling in one week as opposed to 2 to 3 weeks for a human.
