We've mentioned Dunn Vineyards quite a bit lately and it looks like this will be a great event for the Nor Cal folk to try and attend. No full lineup yet, but they mention some interesting tidbits on their facebook flyer. They quoted the wine advocate, and something that caught my eye was the line "Dunn makes no apologies for removing alcohol from his wines if they come in over 14%"...curious as to how this is done.

I am a novice to wine, but perhaps there is usage of "spinning cone" or dilution with added water, or maybe "reverse osmosis" though these processes would really strip any "flavors" and consequently fruit body -thinking back to 2008 when the Northern CA wildfires lent a smokey tinge over central coast vines. Perhaps adding sugars, chaptalization, "after" fermentation? Various yeasts to "improve" removal?
