Cheese Recs for Sparkling Shiraz

I'm hosting a birthday celebration this week and plan to serve a cheese plate for dessert with my new favorite sparkling shiraz. Any cheese recommendations? By my book, all cheese is good cheese so I'd appreciate any and all outrageous suggestions!

I agree - all cheese is good! I always love a brie for dessert, although common, it's just good! Extra sharp and aged parmesan is a nice one as well.

There is a great cheese here in Sonoma County that we use for food & wine pairings called Reneta. It is a 'single cow cheese'. That's right, it's a cheese made from the milk of s single cow. We get from Raymond CheeseMongers (http://www.raymondcheesemongers.com...). Check out the website, it has some great cheese ideas.

Hmm, sparkling shiraz... How sweet is it? The few i've tried are really really syrupy. Im not sure what would pair with that, perhaps a creamy cheese would complement the thickness of the wine, or something sharp (oh, lol, thats what ocean said)...

Yeah, i'd say something sharp, to counterbalance the gloupy nature of the wine

John - single cow cheese. Ive heard of that, its hardly a "scalable" solution. What happens once the cow's milked - how do we get more?

With a Sparkling wine I always recommend an aged Parmesan or Pecarino romano
