To use an analogy, I view Sake as the canvas and sushi as the paint strokes. Wines tend to layer paint strokes over paint strokes. Sushi will not serve as a canvas....

Personally, I don't think any wine goes well with soy sauce, wasabi and ... perhaps, but I like Sake, even beer, or tea with my sushi. There are ways to ameliorate things if we're just talking about sashimi, basically by cutting down on the soy sauce...

I also live in Tokyo and absolutely love sake. I recommend a place called "Sake no Ana" ("the sake hole") in the Ginza area. They have around 130 sakes, fantastic stuff and very knowledgable sake sommeliers (if that is the right expression).
