Thse wines are processed that way : the alcoholic fermentation of the wine is stopped by addition of neutral wine alcohol. Then those wines are put in glass "bonbonnes" ( large 50 l bottles) in open air for one year. The thermical shocks between summer and winter gives the wine an oxydation. after that year, the wine is put in oak barrel pour 5, 10, 20,... years. Read moreA wild nose, gorgeous slightly honied fruit nose, yes its hot but so rich with great wax, incense, dried orchard fruits pressed flower and forest floor tones, noticeably sweet with plenty of acid to balance it, deep dried pear and spiced peach tones with honied pineapple nuances on the quite thick and powerful but still elegant, mid-plate with deep honey notes on the backend that dips a bit on the finish but has a nice balsamic toned dried apricot finale. Big rich sweet and delicious, bring on the foie! 94pts    (hide)

  Rosenblum Cellars Zinfandel Desiree Chocolate Dessert Wine

  This is a beautiful dark ruby red port. It is thick and decadent and has been ... cheese, and surprisingly a foie gras mousse that contained raisins and port - it wasn't very salty so I guess that explains the workable combo
