Cool and Secure maturation underground cellars in Observatory.
Storage Conditions - wines are stored in clean, dark, vibration-free underground cellars. The temperature is controlled between 13 and 14 degrees Centigrade (55 and 57 degrees Fahrenheit). Daily temperatures are recorded. The relative humidity generally runs above 70% and is recorded. Cellar floors are dry.
Security - the cellars are locked and protected with high security alarms and closed-circuit television. Access only permitted with a member of WINE CELLAR staff. All deliveries and withdrawals are checked and recorded on duplicate receipt and dispatch forms.
Insurance - Insurance is provided by WINE CELLAR to cover water, fire and flood damage up to R133.33 per litre. The cost of the insurance cover is included in the charges for the year.
