Welcome to UnCork-It. UnCork-It is the brainchild of owners George and Peter Stellas, both Chicago natives. The Stellas family has been in the grocery business for almost 80 years in Chicago and their stores have always been at the cutting edge of retail excellence. In March 2003 George took over running his downtown store liquor department and he immediately saw the potential and need to offer his customers the best prices in the city, yet in a very clean sophisticated environment. "The demographics of the wine and liquor customer has changed in the last few years and we wanted to build a store that addressed the changing customer base." Thus UnCork-It was born! – Description from markomkc

  • I've often heard of this phenomenon from a number of different sources, and you hear it repeated by casual drinkers over and over but i'm not really sure if I've ever heard an explanation for it.Can anyone shed some light? How a wine can drink well upon release and then for maybe a year after, but then "go to sleep" and shut down for a number of ... Snoothrank:

Read More

  • Sterling Vineyards Cabernet Sauvignon Napa Valley 2003

    Snoothrank:

Whoever recommended drinking this vintage between 2004 and 2007 was way off the mark. I purchased the last four bottles from a retailer several years ago and opened the first of those this evening to accompany my steak au poivre vert. It was a wonderful experience; the wine was lush with a fragrant bouquet, full-bodied, complex and perfectly bal... Read More

  • Corino Vigneto Arborina Barolo DOCG 2005

    Snoothrank:

My first experience with Barolo. O......M......G! I've been on a roller coaster ride with Italian wines. Some have been to die for....some I couldn't get through a glass. This is among the top wines I've ever had. It's tannic, it's fruit forward, it's smooth as silk. The combination I thought was near impossible to acheive. I was fortunate enoug... Read More

  • One topic leads to another! How many of you think cork taint is less common than it was a few years ago? I think things have gotten better and I know of at least one cork broker who has a method of purging the TCA out of the corks before delivery. Plus, they work with a very sophisticated wine lab and the QC is much better. What do you think? Read More

  • 2 Question came up lately..1) I've been to a wine tasting lately where Philippe Magrez, son of Bernard Magrez presented some of their wines. Some younger, some older vintages. During the tasting someone asked the question how long before consumption one should decant wine. The answer of Philippe was, the younger the wine the more air it needs to... Read More
