Sweet Potato, Quinoa Butternut Squash Gratin 222012 8 servings olive oil 2 T shallot, minced 1 large garlic, minced 4 clove chipotle chili in adobo sauce 1 -- adobo sauce 1 T garlic, minced 2 clove quinoa flour 5 T dried thyme 12 t low-fat milk 2 c parmesan cheese 34 c salt 12 t freshly ground black pepper 12 t sweet potato, peeled and cut into cubes 3 c butternut squash, peeled and cut into cubes 12 large cooked quinoa 1 34 c shredded Gruyere cheese 12 c Preheat oven to 350 degrees Heat olive oil over medium heat in a large saucepan Add shallot, garlic, chipotle chili, garlic and adobo sauce and cook for 3 minutes Add 4 T quinoa flour and thyme and cook for to more minutes, stirring constantly Slowly stir in milk and whisk until well combined Stir constantly for 3 minutes until mixture starts to thicken Add parmesan cheese and cook until cheese melts Remove from heat and salt and pepper to taste Bring a large pot of water to boil Carefully place diced sweet potatoes in pot and boil for 4 minutes Remove with a slotted spoon Add squash and boil for 4 minutes Drain Spray olive oil in an 11 x 7 baking dish Add potatoes, squash and cooked quinoa and stir to combine Cover with sauce and top with Gruyere cheese Bakes for 40 minutes Preheat broiler and broil for an additional 3 minutes, until top is golden brown Reprinted with permission from Wendy Polisis The Quintessential Quinoa Cookbook Skyhorse Publishing, 2012 wine pairings
