Mango Coconut Chicken Curry with Cool Cucumber Salad Sesame Rice cakes 11192010 servings Sesame seeds salt 1 T cornstarch 1 T rice vinegar 1 T sugar 1 T cooked jasmine rice cooled 3 c Sesame Rice Cakes fresh mint finely chopped 2 T lime zest 1 T lime juice 1 T sugar 1 T white wine vinegar 14 c radishes very thinly sliced 4 english cucumber deseeded and finely sliced 1 Cucumber Salad Toasted coconut Lime wedges Handful minced cilantro can coconut milk 15 oz 4 tablespoon white wine vinegar 2 chicken stock 2 c curry paste 2 T curry powder 2 T mango chopped 2 fresh minced ginger 2 T garlic minced 4 clove red peppers separated one finely chopped, one julienned 2 onions separated one finely chopped, one julienned 2 chicken tenders, cut into cubes 2 lb Mango Coconut Curry To make mango chicken curry - In saute pan, on medium high heat, add 2 tbs oil Add chopped onion, chopped red bell pepper Cook until softened, about 5 minutes Add curry powder, ginger and garlic Cook another 2 minutes, adding oil if necessary Add vinegar, stock and half of the chopped mango Bring to boil lower heat and simmer 15 minutes Pour into blender and puree Taste for seasonings and adjust as necessary In same pan, add 2 tbs olive oil, chicken cubes, julienned onion and pepper Cook until chicken is done, about 10 minutes Add curry paste, mango puree and remaining mango cubes Simmer for 15 minutes or until warmed through Season with salt and pepper If sauce is too sweet, adjust seasoning with more vinegar wine pairings
