Speyside, in the north center of Scotland, has the highest number of whisky (always spelled without the “e” in Scotland) distilleries in the country. It touches on the Highlands, but because of its sheer size and the range of styles produced, has its own zone.
Speyside whiskies are primarily single malts, which means they are produced from a single grain (always malted barley in Scotland), and a single distillery, produced from vats of batches in the same year, and distilled twice through a continuous (Coffey) still. They must be aged a minimum three years in oak (most often previously used Bourbon, Sherry or wine barrels) upon release. If there is a vintage declared on a bottle of single malt, all the whisky was distilled in that year. They are generally rich in body and flavor, often with toffee, caramel and heathery notes.
